Albert Turk GmbH

Albert Turk GmbH, Metal Forgers
Germany
Albert Turk was founded in 1857 in Meinerzhagen-Mühlhofe, Germany, when the trained blacksmith Karl Turk set up a hammer mill in his father-in-law's mill. On the large flat hammer, shovels and pans were made that soon became known well beyond the immediate local area. The forge has continued to produce metal hardwares and is renowned for its hot-forged irin pans, made entirely from a single piece of metal, with no welding or joins of any kind. More than 160 years after the hammer mill was founded, Karolin Turk represents the 6th generation of this family business. Their forged pans have remained virtually unchanged since 1857, with exceptional durability and robustness, which – with the right care – makes them a kitchen tool for life. Thanks to their excellent thermal conductivity they are perfect for searing. Over time a natural patina forms on the cooking surface, creating a natural non-stick surface.
Constructed from natural, environmentally friendly materials, these pans are free from harmful coatings, and are crafted in Germany by experts with many years of experience. After the initial seasoning they are easy to care for and need only minimal cleaning. Another advantage of uncoated iron pans is their resistance to scratches and cuts, as their surface structure does not change even after years of use. The more they are used, the better the cooking surface becomes: darker, smoother and with a patina that prevents sticking and rust. Once this state is reached, the pans deliver their optimum frying properties.

The making process begins with a solid block or blank of raw iron. The iron is placed into a furnace and heated to roughly 1,000°C (1,832°F) until it becomes bright red, glowing, and completely malleable. While white-hot, the iron block is placed under a massive open-die mechanical drop hammer (or fall hammer). To create the handle, a master blacksmith stretches and draws out the long handle directly from the iron block. The remaining mass of the iron block is hammered out flat to form a wide, thin paddle that will eventually become the cooking surface. Once the rough form is established, a mechanical press punches out the exact circular geometry of the pan body from the flattened iron.

The hot pan is worked again under a heavy, specialised striking hammer. The flat iron paddle is beaten against a mould to turn up the edges, forming the high sloped rims characteristic of frying pans. During this phase, the blacksmith also hammers the classic decorative hook at the very tip of the handle so the pan can be hung up for storage. At this stage, high-tech refining occurs — the pan is inspected, and any uneven sections along the rim or body are precisely levelled using a laser. Because the pans are beaten repeatedly by a heavy hammer, every individual pan emerges with unique surface textures, small cosmetic tooling marks, and distinct dark hues. This structure gives the pan incredible thermal conductivity and allows it to develop a natural, slick non-stick patina over time through seasoning.

Seasoning Iron Pans

Iron pans require seasoning, which creates a natural non-stick surface on the pan, and builds over time. To begin, apply a very thin coat of vegetable oil inside and out using kitchen roll, then place onto a medium to high heat and allow the oil to heat to smoking point (an extractor fan is useful here). When the oil reaches smoking point the carbon in the pan combines with the oil to create the seasoning. The pan will eventually turn black, although this will take a few uses to achieve. For more information regarding care of a carbon steel pan, please visit our Ways & Means pages.

Potato Seasoning

An alternative approach to seasoning, recommended by Albert Turk, is the use of potato peelings, oil and salt. Take a look at a short instructive video here.
