Chantry Knife Sharpener

Chantry Knife Sharpener
A How To Guide

The Chantry Knife Sharpener will sharpen any plain or scalloped edged knife safely and efficiently, without wearing away the blade. At the heart of the tool, there are two small butchers’ steels, the same hardness, temper and cut as a professional steel. The steels are pre-set at the optimum edge angle for our Sabatier, Lamson and Pallarès collections (or any Western kitchen knife), and are spring-loaded so as not to damage the knife — revolving under tension, realigning bumps and kinks in the blade edge that occur during day-to-day use.

We find it best to keep the sharpener within easy reach of our chopping board, so we can run our knife through a few times as soon as we feel the blade getting slightly dull.

To use a Chantry Knife Sharpener, follow these simple steps:
— Clean the blade: Wipe the knife edge clean to prevent food residue and dirt from getting onto the internal sharpening steels.
— Position the sharpener: Place the unit on a stable, flat surface. You can hold it with either your left or right hand.
— Draw the blade through: Insert the heel of the blade into the slot between the revolving steels. Pull the knife straight back toward you just as if you were slicing a piece of bread.
— Apply steady pressure: Press down firmly enough to engage the spring-loaded steels so they rotate and move under tension.
— Repeat as needed: Run the knife through 4 to 5 times for regular maintenance. If the knife is very dull, use a more vigorous action or repeat the pulls additional times.

Icon of 70's Design

There are multiple models of the Chantry Knife Sharpener, but the Chantry Classic (designed by Robert Welch in the 1970s) is on permanent display in the New York Museum of Modern Art as a 1970s classic.

Not for Japanese Knives

Please note that the Chantry Knife Sharpener is not suitable to use on Japanese style knives and could result in damage, as Japanese knives require sharpening at a different angle to most Western knives, and are often single-sided.
