Catalonian Four Knife Set with Roll, Carbon Steel

Catalonian Four Knife Set with Roll, Carbon Steel
£149.00
Ex Tax: £124.17

A set of 4 Spanish-made knives with a bespoke waxed cotton knife roll made in Oxfordshire. With boxwood handles, the knife set consists of 22cm, 16cm, 13cm and 11cm Classic kitchen knives, with rounded boxwood handles and distinctive Pallares Solsona leaf-shaped blades, made from carbon steel. The bespoke knife roll is crafted from darkest green waxed cotton with antique copper eyelets and rivets, and leather cord for wrapping around the roll. Carbon steel knives are very popular as they keep a great edge and are easy to sharpen, but will develop a patina and rust if left wet, so it's best to dry straight after washing and oil occasionally. By electing to purchase this item you are confirming that you are over the age of 18, and that we may if in any doubt contact you prior to dispatch in order to verify this.

Care Advice

Hand wash and dry well with a soft cloth immediately after use. Follow with a light coating of camellia or a food safe mineral oil if the knife looks like it needs it. Ensure the knife is never left sitting in wet conditions. Store in a dry environment to prevent rust formation. Carbon steel is prized for its ability to retain a sharper edge, but requires a little more care than stainless steel, to keep the blade in good condition. A sharp knife is a safe knife — use a honing rod to keep a fine edge, and sharpen with a stone or other sharpening tool when necessary. Treat the wooden handle when necessary with a food safe mineral oil to keep the wood from drying out and prevent warping or splitting, which could result in the handle coming loose.
  • Materials Waxed cotton, leather, carbon steel, and boxwood, and copper
  • Further Information Carbon steel holds a finer edge and sharpens more effectively than stainless steel, making it a chef’s favourite companion in busy kitchens. However, carbon steel is prone to oxidisation or rusting if neglected. The best way to avoid this is to use regularly, and wash and dry straight after use. To avoid rust, the blade should never be left soaking in water, or kept in a damp environment. As with any high-quality knife, carbon steel knives should not be put through a dishwasher, especially if they have wooden handles. We recommend washing the blade as soon as possible after use and to wipe any remaining moisture off with a tea towel. Store individually in a knife block, knife sleeve or on a magnetic rack. Oil lightly with a neutral oil (i.e, vegetable, or camellia), from time to time before storage as this will protect the blade from moisture. Over time and use, the blade of the knife will change colour and develop a patina (often varying shades of grey, blue and green) — this is normal, and often desired by users as it creates unique character and personality to the blade, whilst also creating a protective layer on the steel.
