Sabatier K Olive Wood Paring Knife, 4", Carbon Steel

Sabatier K Olive Wood Paring Knife, 4", Carbon Steel
£52.00
Ex Tax: £43.33
An olive wood-handled French pattern carbon steel paring knife, with four inch blade. Carbon steel is renowned for its ease of sharpening, keenness of edge, and better edge retention than similar stainless steel knives. It will discolour in use, turn almost black as it develops a protective patina, but should never be left wet, as it may if neglected rust. Perhaps not ideal for every household, but there are many who would never use anything else. To learn more about these knives click here. By purchasing this item you are confirming that you are over 18, and that we may contact you prior to dispatch in order to verify this.

Care Advice

Hand wash and dry well with a soft cloth immediately after use. Follow with a light coating of camellia or a food safe mineral oil if the knife looks like it needs it. Ensure the knife is never left sitting in wet conditions. Store in a dry environment to prevent rust formation. Carbon steel is prized for its ability to retain a sharper edge, but requires a little more care than stainless steel, to keep the blade in good condition. A sharp knife is a safe knife — use a honing rod to keep a fine edge, and sharpen with a stone or other sharpening tool when necessary.
  • Weight g 80g
  • Item Dimensions L20 x W2.3 x H1.5
  • Materials Carbon steel, metal, and olive wood
  • Further Information Carbon steel holds a finer edge and sharpens more effectively than stainless steel, making it a chef’s favourite companion in busy kitchens. However, carbon steel is prone to oxidisation or rusting if neglected. The best way to avoid this is to use regularly, and wash and dry straight after use. To avoid rust, the blade should never be left soaking in water, or kept in a damp environment. As with any high-quality knife, carbon steel knives should not be put through a dishwasher, especially if they have wooden handles. We recommend washing the blade as soon as possible after use and to wipe any remaining moisture off with a tea towel. Store individually in a knife block, knife sleeve or on a magnetic rack. Oil lightly with a neutral oil (i.e, vegetable, or camellia), from time to time before storage as this will protect the blade from moisture. Over time and use, the blade of the knife will change colour and develop a patina (often varying shades of grey, blue and green) — this is normal, and often desired by users as it creates unique character and personality to the blade, whilst also creating a protective layer on the steel.
