Sabatier K Antique Paring Knife, 4 inch, Carbon Steel

A classic wood handled French pattern carbon steel paring knife, with four inch blade, from old stock. Blade markings vary. Carbon steel is renowned for its ease of sharpening, keenness of edge, and better edge retention than similar stainless steel knives. It will discolour in use, turn almost black as it develops a protective patina, but should never be left wet, as it may if neglected rust. Perhaps not ideal for every household, but there are many who would never use anything else.

This blade is made from carbon steel, which keeps a better edge than stainless, but will develop rust spots if left wet or kept damp and will naturally discolour in use — dry after use and oil regularly to keep it in good condition.
