High quality stainless steel knives will often include a high-carbon element, to increase performance. These kind of stainless steels are not 100% rust proof, and will require careful handling. Any good quality kitchen knife should be kept away from the dishwasher, as the combination of salt, humidity and heat are not beneficial for the knife’s cutting edge. A sharp knife is a safe knife — use a honing rod to keep a fine edge, and sharpen with a stone when necessary.
