On permanent display at MOMA New York and based around a replaceable mechanism unchanged and in production since 1929, the Chantry sharpener consists of 2 rolling butchers steels, mounted at the perfect sharpening angle within a stable, heavy, easy-grip, cast iron case. Whilst not a magic bullet for the hopelessly blunt (we’d advise a stone) these do offer a fairly foolproof method of honing most stainless or carbon steel western pattern knives.
