Pallarès Nakiri Style Vegetable Slicer

Pallarès Nakiri Style Vegetable Slicer
£89.00
Ex Tax: £74.17

A carbon steel rectangular bladed nakiri style vegetable slicing cleaver with a through tang and smooth boxwood handle. From the workshops of Cuchillería Pallarès, the one surviving knife and tool maker in a town once dotted with small manufacturers. Now with a workforce of 15, the management still split their time between administration and manual craft production. Best kept dry and cleaned immediately after use. By electing to purchase this item you are confirming that you are over the age of 18, and that we may if in any doubt contact you prior to dispatch in order to verify this.

This blade is made from carbon steel, which keeps a better edge than stainless, but will develop rust spots if left wet or kept damp and will naturally discolour in use — dry after use and oil regularly to keep it in good condition.

By purchasing this item you are confirming that you are over the age of 18, and that we may contact you prior to dispatch in order to verify this. Orders including any bladed items will incur an additional courier age verification charge and legally require delivery to persons aged 18 and over.

Care Advice

Hand wash and dry well with a soft cloth immediately after use. Follow with a light coating of camellia or a food safe mineral oil if the knife looks like it needs it. Ensure the knife is never left sitting in wet conditions. Store in a dry environment to prevent rust formation. Carbon steel is prized for its ability to retain a sharper edge, but requires a little more care than stainless steel, to keep the blade in good condition. A sharp knife is a safe knife — use a honing rod to keep a fine edge, and sharpen with a stone or other sharpening tool when necessary. Treat the wooden handle when necessary with a food safe mineral oil to keep the wood from drying out and prevent warping or splitting, which could result in the handle coming loose.
  • Weight g 200g
  • Item Dimensions L30.5 x W6 x H3
  • Materials Carbon steel and boxwood
  • Further Information Carbon steel holds a finer edge and sharpens more effectively than stainless steel, making it a chef’s favourite companion in busy kitchens. However, carbon steel is prone to oxidisation or rusting if neglected. The best way to avoid this is to use regularly, and wash and dry straight after use. To avoid rust, the blade should never be left soaking in water, or kept in a damp environment. As with any high-quality knife, carbon steel knives should not be put through a dishwasher, especially if they have wooden handles. We recommend washing the blade as soon as possible after use and to wipe any remaining moisture off with a tea towel. Store individually in a knife block, knife sleeve or on a magnetic rack. Oil lightly with a neutral oil (i.e, vegetable, or camellia), from time to time before storage as this will protect the blade from moisture. Over time and use, the blade of the knife will change colour and develop a patina (often varying shades of grey, blue and green) — this is normal, and often desired by users as it creates unique character and personality to the blade, whilst also creating a protective layer on the steel.
