Suzuki Black Nakiri, Single Bevelled

Suzuki Black Nakiri, Single Bevelled
£189.00
Ex Tax: £157.50

A Japanese Nakiri kitchen knife with a blackened blade and octagonal spalted maple handle, great for slicing vegetables and general food preparation use. Made by Suzuki Uchi Hamono,  a renowned Japanese blacksmithing workshop led by Tsukasa Suzuki, who is known for his exceptional skills in forging unique kitchen knives. Hailing from Yamagata prefecture, a region known for its long-standing tradition of blacksmithing, he learned the art of forging from his father and has been practicing it for more than 40 years. This knife is single-sided, which means it has a bevel on only one side of the blade. One advantage of this geometry is its ability to make food fall away from the blade with minimal effort, a feature particularly useful in precision cutting tasks, where the chef’s control over the cut is crucial. This knife has a distinctive blade thickness profile — the spine, referred to as the ‘ear’ of the knife, is relatively thick at around 5mm, while the rest of the blade is extremely thin at just over 1mm. The thick spine, whilst providing strength and rigidity, also helps prevent food from piling up on the blade, a feature that is particularly helpful when working with ingredients that tend to stick to the knife. This knife should not be used to cut bone and should be used in a slicing motion. The blade length of this knife is 165mm. Hand wash only, and dry immediately.

This blade is made from carbon steel, which keeps a better edge than stainless, but will develop rust spots if left wet or kept damp and will naturally discolour in use — dry after use and oil regularly to keep it in good condition.

By purchasing this item you are confirming that you are over the age of 18, and that we may contact you prior to dispatch in order to verify this. Orders including any bladed items will incur an additional courier age verification charge and legally require delivery to persons aged 18 and over.

Care Advice

Hand wash only, and never leave soaking. Dry immediately, followed with a light coating of camellia or a food safe mineral oil. Store in a dry environment to prevent rust formation. The hard steeled centre of this blade enables razor-thin sharpening, but results in a brittle edge. With this in mind, to prevent chips exceptional care should be taken to avoid bone-in meats such as legs of lamb and chicken thighs, and tough skinned vegetables such as gourds and pumpkins. Treat the wooden handle when necessary with a food safe mineral oil to keep the wood from drying out and prevent warping or splitting, which could result in the handle coming loose.
