Niwaki White Paper ‘Shirogami’ Steel Santoku

Niwaki White Paper ‘Shirogami’ Steel Santoku
£180.00
Ex Tax: £150.00
A white paper ‘shirogami’ steel Santoku kitchen knife from the Tadafusa workshops in Sanjo, Niigata Prefecture, Japan. Yasugi Specialty Steel white paper steel is an exceptionally pure and fine high carbon steel able to be sharpened to an incredibly hard yet fine edge, this is sandwiched between two layers of softer, more malleable jigane steel for better durability. Care should be taken with the edge, which is hard yet brittle — don’t cut bones, don’t use on hard surfaces, and being carbon steel these can rust if left wet — hand wash, dry thoroughly, and wipe with a little Camellia Oil if not used daily.

Care Advice

Hand wash only, and never leave soaking. Dry immediately, followed with a light coating of camellia or a food safe mineral oil. Store in a dry environment to prevent rust formation. The hard steeled centre of this blade enables razor-thin sharpening, but results in a brittle edge. With this in mind, to prevent chips exceptional care should be taken to avoid bone-in meats such as legs of lamb and chicken thighs, and tough skinned vegetables such as gourds and pumpkins. Treat the wooden handle when necessary with a food safe mineral oil to keep the wood from drying out and prevent warping or splitting, which could result in the handle coming loose.
