Wasabi Grater

Wasabi Grater
A How To Guide
Wasabi graters or oroshiki are traditional Japanese kitchen tools used for grating wasabi, other crips vegetables or fruits, and aromatics such as garlic and ginger. Differing from Western kitchen graters that have large perforated holes, they create a fine pulp or paste of whatever ingredient is being grated, which is then typically collected with a small brush.
To use an oroshiki, clean your wasabi (or other firm vegetable or fruit) by trimming off any leaves, stems, or damaged tough parts. Peeling is optional though it will allow for a smoother creamier paste. Place the oroshiki on a secure flat surface with a wet tea towel to prevent any movement or slipping during grating. To grate the wasabi, place it at a slight angle on the textured surface of the grater and run it in gentle but firm circular motions. This will ensure a smooth texture in the paste. Collect the paste with a small stiff brush like our Bamboo Oroshiki Scraper Brush and serve immediately for maximum flavour. To clean a single or double-sided oroshiki, hand wash using a gentle soap detergent, warm water, and brush to clean out any left behind fibres or pulp. Air dry thoroughly before storing in a dry place.

Traditional Oroshiki

Specifically for grating wasabi, oroshiki are traditionally made from shark skin mounted on a wooden board because the skin’s unique sandpaper like texture enables finer grating of ingredients like wasabi, ginger, and daikon radish.
